An easy-to-make festive appetizer is perfect for holiday entertaining. Decorate plates with pomegranate seeds and wrap the parcels ?with chives for a merry presentation.
PREP TIME: 15 minutes
COOK TIME: 3 minutes
INGREDIENTS: 3 oz plain goat cheese
2 tbsp (30 mL) chopped raw pumpkin seeds
1 tbsp (15 mL) freshly squeezed lemon juice
2 tsp (10 mL) lemon zest
freshly ground pepper, to taste
1/4 cup (50 mL) pomegranate seeds
25 wonton wrappers
vegetable oil for frying
In small bowl, combine goat cheese, pumpkin seeds, lemon juice, lemon zest and pepper until well blended. Lay wonton wrappers on clean surface, place 1/2 tsp (2.5 mL) goat cheese mixture in the middle of wonton wrapper and top with 5 pomegranate seeds. Brush outside edges of wrapper with water then gather the four corners around the filling and pinch to seal and form a parcel. Repeat with remaining wonton wrappers and filling.
In saucepan, heat 1 inch oil to 350F. Add parcels and cook on all sides until golden brown, about 3 minutes. Drain on paper towel and serve immediately. To reheat, place on baking tray and reheat at 350F for 12-15 minutes.
To remove seeds from pomegranate fill a bowl with water and gently remove seeds under water. The extra membrane and peel floats to the top to be skimmed off. Drain and refrigerate seeds in an airtight container for up to 3 days.
