This recipe came about after running out of olive oil! It's also ideal for picnics because it does not contain any mayonnaise or dairy products.
When experimenting with salad dressings, an avocado is an amazing replacement for oil in a recipe, giving it an automatic creamy, decadent texture yet boosting the nutritional value significantly. Avocados are brilliantly green and full of beneficial fats and antioxidants.
Ingredients:
1 clove garlic, minced
1/4 cup freshly squeezed lemon juice
1 tbsp pure maple syrup
1/2 avocado, pitted and peeled
Salt & pepper, to taste
Place garlic, lemon juice, maple syrup and avocado in a blender and puree (or use a large glass measuring cup and a stick blender). Stir in poppy seeds and you'll have a delicious, creamy dressing great for any salad.
Korey's Tips
Buy avocados at varying degrees of ripeness as they continue to ripen after purchase. Buy bright green for future use, green for soon and black yet firm for immediate use.
When adding avocados to dishes, slice or mash them just before serving. To stop them from browning, sprinkle with lemon or lime juice.
To ripen avocados more quickly, place near bananas. Refrigerate to stop or slow down ripening.
