Recipe – Apple Oatmeal Cookies

This nutritious cookie is ideal for school snacks or lunches, or as a quick grab-and-go breakfast.

Ingredients:

1 cup all-purpose flour 

1/2 cup whole wheat flour 

1/2 cup quick cooking (not minute) oats 

1/3 cup sesame seeds 

1/4 cup white sugar 

1 teaspoon cinnamon 

1/2 teaspoon nutmeg

1/4 teaspoon ginger 

1 teaspoon baking powder

1/2 teaspoon baking soda 

1/4 teaspoon salt 

1 1/2 cups finely chopped apples (Golden Delicious are ideal)

1/2 cup honey 

1/2 cup vegetable oil 

1/3 cup milk 

1 large egg

1/2 cup golden raisins or currants (optional)   

1) Heat oven to 375 degrees F. In large bowl, mix flours, oats, sesame seeds, sugar, cinnamon, nutmeg, ginger, baking powder, baking soda and salt. Stir in chopped apples.

2) In small bowl, beat together honey, oil, milk, and egg; add to oat mixture and stir until combined. Fold in raisins or currants, if desired.

3) Drop by tablespoonfuls onto ungreased cookie sheets. Bake 10 to 12 minutes or until lightly browned. Transfer cookies to wire rack and cool. They can be frozen and will retain all their flavour but will lose their initial, just-baked crispness. Makes approximately 2 dozen cookies.
